I love branching out and learning about new things to eat and enjoy. I’ve known about pomegranates for years, but didn’t really realize their potential till last week when POM Wonderful and Momtrends hosted a wonderful dinner opening my eyes to some Pomegranate Fun!
What I loved was we actually got in the kitchen to make some wonderful dishes and see just how versatile POM POMS fresh Arils are. I made a simple pomegranate chicken salad recipe that MOM Boss author Nicole Feliciano created. I’ll be making this for a quick-lunch and I also can’t wait to recreate after Thanksgiving with leftover turkey! You can find her recipe over at MomTrends.
While I was working hard on that recipe my fellow friends were also creating some delicious dishes, Roasted Salmon with POM POMS Salsa, POM POMS Stuffed Squash, Moroccan Shrimp with POM POMS, but one really stuck out to me more than the others POM POMS & Parmesan Cauliflower.
½ cup POM POM Fresh Arils
2 heads cauliflower
2 tablespoons olive oil
½ cup finely grated parmesan
½ teaspoon sea salt
¼ black petter
1/3 cup chopped flat-leaf parsley
Step 1: Heat oven to 400 degrees. Wash and cut cauliflower into small pieces
Step 2: In a bowl, toss together the cauliflower, olive oil, Parmesan, salt and pepper
Step 3: Transfer to a rimmed baking sheet and roast, until cauliflower begins to turn golden, about 35 minutes, turning with a spatula half-way through.
Step 4: Serve on a platter topped with POM POMS Fresh Arils and parsley
I love how simple and tasty this dish is. It will make a perfect side for a holiday meal or weeknight dinner. The fresh arils really add a pop of color and flavor to a vegetable that’s not always a favorite.
I loved getting into the kitchen for this event, and learning a lot about Pomegranates. Between the fresh arils and juice I learned just how much I really enjoy this seasonal fruit. I say seasonal because you can only get POM Wonderful pomegranates while they’re in season (October-January) and they’re all grown in California.
Getting to try the first shipment of fresh arils was a big treat and I’ll be adding them to our grocery list. I’ve been eating them out of the container with a spoon as a snack, and a big bonus is the kids like them so I feel it’s a great healthy snack for everyone. I know I’ll use them for garnishes this holiday season in food and drinks and will add some to my guacamole. The fresh sweet/tart pop you get when you bite into one is perfect.
Also, keep your eyes open for the POM Wonderful 100% Pomegranate Juice, each 8oz bottle has as much potassium as a medium banana, no added sugar and you get two whole pomegranates in that bottle. I feel the need to make a holiday punch for the kids with this!
