Broccoli Cheddar soup Panera Style with a ZingIt’s winter time which means it’s cold and windy out. As I walk home from the train or bus all I want is a yummy cup of soup to warm up with for dinner. My personal favorite is Broccoli & Cheddar Soup. I really love the kind Panera makes so I worked hard to find something that came close to theirs, but I added a special zing to it.

Panera Style Broccoli Cheddar Soup

Ingredients:
1-2 broccoli heads depending on how much you like
1 Block (8oz) Cheddar Cheese shredded
1 1/2 cups shredded carrots
1/2 medium onion chopped
1/4 cup melted butter
1/4 flour
2 cups half and half
2 cups chicken stock
1/4 tsp nutmeg
salt and pepper to taste
secret ingredient: Old Bay!

Step 1: In a small pot saute onion in 1 tablespoon of butter until transparent
Step 2: In your soup pot/dutch oven over medium head make a roux using the 1/4 cup melted butter and 1/4 cup flour. Whisking continually for about 5 minutes.
Step 3: Slowly add in half and half, continuing to whisk
Step 4: Add chicken stock, stir and let simmer for about 20 minutes
Step 5: Add in broccoli, carrots and sauteed onions. Stirring it all together
Step 6: Allow to cook over low heat for about 20-30 minutes depending on stove
Step 7: Stir in cheese until melted, add nutmeg, salt and pepper and a splash of Old Bay!
Step 8: Dig in and Enjoy!

Broccoli Cheddar SoupI always like to eat my soup with bread on the side so make sure you’ve got some handy. This recipe is relatively easy and while it’s not the healthiest, it is pretty darn tasty and perfect for those winter/snowy days. I also like the little zing from my favorite spice Old Bay.
