I’m a full time out of the home working parent and while a lot of nights I come home to dinner just about ready; there are those nights where I have to figure out what to make last minute and feed the family. Of course we always want our favorite food, pizza, specifically Red Baron® Classic Crust, but I also want to give the kids something in addition to pizza and that’s when my avocado caprese salad gets made.

Keeping Red Baron pizzas on hand is staple in our freezer because they are quick to grab and pop in the oven.

Did you know Red Baron has introduced The Baroness, a mom who’s seen it all and proudly embraces imperfection with ingenuity and humor. I’m loving her and kind of feel like a Wing Mama to her as I manage my way through the act of turning on the oven, grabbing the pizza, getting the ingredients to throw together the salad; all while telling my kids to get in the kitchen and help make dinner. It’s a little crazy, but it’s also exciting and a fun change for my day plus it gives me a chance to bond with my kids and teach them a life skill. That’s right I want to teach them to make this early so one day I’ll come home and they can have dinner on the table and ready to go for me. At this moment in life though I’m just winging it, and getting done what needs to be done so once the pizza is in the oven and the timer is set we begin to make our salad.

Supplies:
Cherry Tomatoes
Avocado
Mozzarella Cheese
Basil
Olive Oil
Balsamic Vinegar

As we begin I channel The Baroness, she’s got an I can do anything attitude, and I kind of feel like if she lived in my town we would be good friends swapping stories, and getting things done, plus she wouldn’t judge that I’m using leftover birthday party napkins because that’s all we have right now. I also know she would approve of me getting the kids involved in the action because I’ve got an even better shot of them eating what’s on the table.

Step 1: I cut the cherry tomatoes in half

Step 2: Slice the mozzarella cheese and then let the kids break it apart into small pieces

Step 3: Cut the avocado (I make mine into dices)

Step 4: Cut the basil into small pieces
Step 5: Put all the items in a bowl and mix together

Step 6: Drizzle some olive oil and Balsamic vinegar over and mix it up

Step 7: Add salt and pepper to taste
Step 8: Serve with a slice of fresh from the oven Red Baron Pizza

I love that we can make this salad and have it ready to eat when the oven timer dings for us to get the pizza out. We’ve recently started making 2-3 pizzas at a time because we all like different things. I’m currently into the Red Baron® Brick Oven Pepperoni, and the kids also love the Red Baron® Single French Bread. Lots of tasty options.
