I love when we’re invited to a friends house for dinner and I ask what can I bring? Usually it’s some kind of dessert. Of course I always wait to the last minute to figure out what to take, so I’m searching through the house to see what will work, that I can make quickly and tastes yummy, Chocolate Pomegranate Bites!

Chocolate Pomegranate Bites

To be fair I had a container of PomPoms in the fridge and we always have Dark Chocolate on hand so it was just a matter of putting it together and topping it off with a little sea salt. Plus it’s a healthy treat and with Pomegranates in season I’m always looking for new ways to enjoy them.

It’s pretty easy and quick to make, but you do need to factor in some chill time.

Supplies for Chocolate Pomegranate Bites

Sea Salt
Mini cupcake liners
Mini cupcake tin

Chocolate Pomegranate Bites

Step 1: Melt your dark chocolate down. (I add a very tiny, tiny bit of coconut oil)
Step 2: Fill your cupcake tin with liners (I like to use the mini cupcakes because it’s really a bite that way)
Step 3: Once your chocolate is melted add a little chocolate to the bottom of the liner
Step 4: Fill with your Arils (I like buying them in the cup because it’s a lot easier, but you can get them right from the pomegranate if you like)
Step 5: Add some more chocolate on top
Step 6: Top it off with a little sea salt (seriously don’t go crazy you only need a little)
Step 7: Place in the fridge to chill for at least an hour
Step 8: Remove from the liners and place on a plate or tray
Step 9: Keep chilled till you’re ready to serve.

I love how simple and tasty this treat can be. It’s minimal work, but has a real wow to it, since it’s something different. I also like it’s not a heavy dessert and it has a freshness to it that makes you smile and ask for another and you can make as many or as little as you want.
