Today my husband is celebrating his 33rd birthday and the one thing he asked for was a bubble cake like he had as a kid.

Adorable right!

 

So since he’s so great I figured I would go ahead and give it to him.  I had never heard or seen one before so I went to the one spot I thought I would be able to find it; Pinterest and it didn’t disappoint.

 

I did a small variation since it’s just the 2 of us and we’re heading out for the weekend so mine was made in a meatloaf pan and I didn’t do 2 layers of ice cream.  I was surprised with how easy the puffs were to make and had fun making it.  I like to think of this as a fancy homemade ice cream cake!

 

I hope it’s everything he remembers it was and that this upcoming year is the best yet.  We’re treating ourselves to a nice dinner at Peter Lugers with friends tonight and checking off an NYC bucket list item at the same time.
