It’s Christmas in July and today I’m celebrating with a pretty cool treat, holiday ice cream sandwiches. Made with my soft and sweet snickerdoodles which is in my opinion the best Christmas cookie out there.

I’ve been watching Hallmark Channel holiday movies all month and I’ve been looking forward to celebrating, but it’s been so hot I wanted to do something cool, which is why I thought ice cream sandwiches would be a perfect way to help celebrate for the whole family.
Ingredients:
Snickerdoodle cookies
Vanilla Ice Cream
red and green sprinkles
melon ball scoop and/or ice cream scoop
Step 1: Place the cookies on a sheet and put in the freezer for 30 minutes. Tip: I try to match up cookies to be the same size next to each other.
Step 2: Put the red and green sprinkles into a bowl
Step 3: Pull the ice cream out a few minutes prior to taking the cookies out of the freezer to soften
Step 4: Scoop some ice cream and place on one cookie, then top with the other cookie and press together
Step 5: Roll in the red and green sprinkles and place back on the cookie sheet upside down (so the ice cream melts in the opposite direction)
Step 6: Place back in the freezer
Step 7: Pull out when you’re ready to eat.
What’s great about these treats is you can either make them with homemade or prepackaged cookies. Of course I love homemade snickerdoodles, but if you want to switch up the cookies or ice cream you can. It’s an easy and the perfect way to celebrate the holiday on a hot summer day or during the season.
