I love a sweet and easy recipe and when I saw one from Wonderful Halos I knew I needed to get to work on making mine. So here’s my Rosemary Mandarin Salad Oil!

This time of year is when we started to grab up those sweet Halos at the supermarket. I love putting them in both the kids and my lunches and when I have a craving for a snack or something sweet I always turn to a Halo because I know it’s going to be tasty and better for me. The smell when I peel one is one of my favorite things, and I also keep some peels handy if I need to zest in a little orange, but why not put those peels to use and infuse some olive oil? Taking it a step further I’m adding some rosemary to really amp up the flavor and will use this both for cooking and as a salad oil.

Supplies Needed:
Halos mandarins peels (I used 2 Halos)
Extra-virgin olive oil
Springs of Rosemary (you can use a different herb if you like)
Salad oil bottle (I got this one at a thrift store for $1)

Step 1: Wash the Halos
Step 2: Peel them and place small pieces of the peel in the bottle
Step 3: Add a spring of rosemary
Step 4: Fill the bottle with extra-virgin olive oil
Step 5: Put the lid on and store in a dark space for 2-3 weeks. Check on it occasionally and give it a little shake.
Step 6: Enjoy those sweet Halos you just peeled
Step 7: When time is up either throw on a cute little tag and give this as a hostess gift or enjoy yourself!

Overall this will take about 5 minutes to make, and while you do have a few weeks for it to really infuse you can give this as a hostess gift right away telling them when it will be good to use. Plus who wouldn’t want something healthy and yummy in the new year!
