One day Mike asked me to come up with a good snack “on the go” for him and the kids, and mentioned oatmeal balls. I thought what a great idea and quickly got to work on coming up with an easy recipe. I wanted to make sure they were healthy and peanut butter free so the kids could take them to school or playgroup. Plus it needed to be super simple and ingredients I always have on hand!
Step 1: Mix all ingredients into a bowl and stir
Step 2: Use a tablespoon or teaspoon to make/mold the balls and place on a cookie sheet (Make sure you pack it tight)
Step 3: Bake at 350 degrees for 20-30 minutes for tablespoon size or 15-20 minutes for teaspoon size
Step 4: Remove from oven, and let them cool
Step 5: Enjoy in yogurt or as a snack
These taste delicious in our Maia yogurt and I love that 1 batch made me about 100 (teaspoon size) bites, which lasted us a couple weeks.
