Summertime is all about fresh. Especially when it comes to eating dinner or bringing a side dish to a party, and this Tomato, Corn Avocado salad is always a hit and oh so tasty!

Summer Salad

We try hard to use what’s local, and to enjoy what the summer season brings. Which is why I want to share our Tomato, Corn, Avocado Salad, but this salad has a little something that makes it different, It’s the freshness of some mint.

Supplies Needed:
Container of cherry tomatoes
2 ears of corn
1 avocado
fresh mint
2 tablespoons olive oil
salt and pepper to taste

Tomato, Corn, Avocado Salad

Step 1: Take the ears of corn and grill them with the husks still on them for about 5 minutes
Step 2: Pull the husks back and grill the corn for another 5 minutes
Step 3: Cut the cherry tomatoes in half
Step 4: Dice the avocado
Step 5: Chop the mint
Step 6: Cut the corn off the cob
Step 7: Mix the corn, tomato, avocado and mint together in a bowl adding the olive oil and salt and pepper
Step 8: Put it in the fridge to cool
Step 9: Enjoy!

Pot Luck Salad

This will feed about 6-8 people as a side salad. It’s perfect for summer nights and goes great with all types of foods.We’ll take it to a potluck, BBQ or just enjoy it for family dinner.
