There’s something about a festive cocktail that will have you holiday ready in moments. Since I believe Christmas in July is just the start of the season I love to celebrate every year by doing something special. This year it’s all about a Pomegranate Ginger Sparkling Cocktail that I can enjoy with friends.

Don’t worry I’ll make my Holiday Ice Cream Sandwiches for the kids and we’ll wear red and green and enjoy the warm weather while dancing around to Christmas tunes and watching Hallmark Christmas movies, and maybe even making some snow cones. It’s just a fun way to celebrate a summer day.

In order to make this sparkling cocktail you’ll need a few supplies:

Pomegranate Juice
Ginger Simple Syrup
Candied Ginger
Champagne Flutes

Step 1: Make your Ginger Simple Syrup (combine 1/4 cup ginger, 1 cup water and 1 cup sugar in a pan. Bring to a boil and then let steep for 1 hour then drain)
Step 2: Take Candied Ginger and sugar and blend them together till they make a sugar like texture
Step 3: Dip the rim of the flute in the ginger simple syrup then dip in the candied ginger sugar to rim the glass
Step 4: Pour in about an ounce of pomegranate juice
Step 5: Add about an ounce of ginger simple syrup
Step 6: Top off with some bubbly Prosecco
Step 7: Enjoy

It’s a tasty and fun cocktail that works for anytime of year, but I love the idea of drinking these at a holiday party, or maybe Christmas Eve or even New Years Eve. It will bring a sweetness and celebratory vibe to any event and since it’s so easy to make you’ll find you’re enjoying it year round.
